Meet our Head Roasting Team
Erin graduated with a degree in Professional Writing.
After 12 years working in the marketing and communications
field, she decided she needed to get out from behind the desk,
away from the computer, and back to connecting
with people face to face. Her sister Bridget shared that her
and 2 business partners Bill Metzger and Sara Heidinger
had an idea of opening a coffee shop that served freshly
roasted coffee. Jumping at the chance to develop a
new skill, Erin was instantly on board. In love with the idea
of creating and serving small batch, freshly roasted
coffee to Buffalo-area consumers, Erin apprenticed with
Alan Hayes of Hayes Home Roasting,
learning all there was to know about the coffee roasting
process. We proudly roast weekly on our American Made
Diedrich Roaster. We roast fresh batches of the five
different types of coffee we serve in the coffee shop.
Erin and our roasting team are looking forward to exploring
more flavors and blending options in the future.
